  • 2 Tbsp brown sugar
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter (softened)
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • For the Maple Glaze: 1/4 cup unsalted butter, 1/2 cup pure maple syrup, 1/4 tsp ground cinnamon, 1/2 tsp vanilla extract, 1 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan and line with parchment paper.
  2. Mash bananas with brown sugar, vanilla extract, and cinnamon in a bowl.
  3. Cream softened butter and sugar until light and fluffy in a large bowl.
  4. Add eggs; mix until combined.
  5. Sift flour, baking soda, and salt into the mixture; stir gently.
  6. Fold in mashed banana mixture until just combined.
  7. Pour batter into prepared pan and bake for about 35-40 minutes (30 minutes at first then lower heat).
  8. Cool in pan for 10 minutes before transferring to a wire rack.
