  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger

  • 1/2 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1/4 cup pure maple syrup
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp pure maple syrup (for glaze)
  • 12 tbsp milk or cream (for glaze)
  • 1/2 tsp vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, spices, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and sugars until light and fluffy.
  4. Add the egg and vanilla extract; mix well. Then incorporate the pumpkin puree and maple syrup until smooth.
  5. Gradually mix in the dry ingredients until just combined.
  6. Scoop tablespoons of dough onto prepared sheets about 2 inches apart.
  7. Bake for 12–15 minutes until edges set; cool on sheets for five minutes before transferring to a wire rack.
  8. For the glaze, whisk powdered sugar with maple syrup and milk until smooth; drizzle over cooled cookies.
