  • 2 pounds Yukon gold potatoes (sliced thin)
  • 1/2 tablespoon avocado oil
  • 1 green chili (or serrano chili)
  • 3 cloves garlic
  • 1 small onion (finely chopped)
  • 1/2 green bell pepper (finely chopped)
  • 2 tablespoons tomato paste
  • 2 teaspoons coriander powder
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons butter
  • 2 1/2 tablespoons flour
  • 2 cups milk
  • 2 cups grated sharp cheddar cheese (1 cup for the sauce + 1 cup for the topping)
  • 1 teaspoon salt
  • 1/2 teaspoon garam masala

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with avocado oil.
  2. In a medium saucepan over medium heat, sauté the onion, green chili, garlic, and bell pepper in melted butter until softened. Stir in tomato paste and spices; cook for an additional minute.
  3. Add remaining butter to the pan, whisk in flour until smooth, then gradually add milk while whisking until thickened. Stir in salt and half of the cheddar cheese until melted.
  4. Layer half of the potato slices in the baking dish followed by half of the cheese sauce. Repeat with remaining potatoes and sauce, then top with remaining cheddar cheese.
  5. Cover with foil and bake for 60 minutes. Remove foil and bake for another 30 minutes until golden brown.
