  • 1 pound ground beef
  • 1/2 pound ground beef
  • 1/2 cup Italian bread crumbs
  • 1 egg
  • 2 cloves garlic (minced)
  • 1/2 small onion (minced)
  • 3 tablespoons Parmesan cheese
  • 2 tablespoons fresh parsley (chopped)
  • 1 cup fresh spinach
  • 6 slices turkey slices
  • 6 slices provolone cheese or 1 cup mozzarella cheese

Instructions

  1. Preheat your oven to 450°F.
  2. In a mixing bowl, combine ground beef, bread crumbs, egg, garlic, onion, Parmesan cheese, parsley, salt, and pepper until well mixed.
  3. Line a baking sheet with foil or parchment paper and spread the meat mixture into a rectangle measuring approximately 12 by 7 inches.
  4. Layer spinach, turkey slices, and cheese evenly over the meat mixture.
  5. Starting from one shorter side, carefully roll the meat mixture into a log shape using the foil or parchment paper as support.
  6. Place the rolled meatloaf on the baking sheet and bake for about 25 minutes until cooked through.
  7. Let it rest for a few minutes before slicing into 1-inch pieces.
