  • 2 pounds lean ground beef (or mix with ground chicken)
  • ½ cup milk
  • 2 large eggs
  • ¾ cup breadcrumbs
  • ¾ cup ketchup (for glaze)
  • ¼ cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 ½ teaspoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (or dried)

Instructions

  1. Preheat your oven to 350°F.
  2. Melt butter in a skillet over medium heat. Sauté onions for 3-4 minutes until softened, then add garlic and cook for an additional 30 seconds.
  3. In a large mixing bowl, combine sautéed onions, garlic, lean ground beef, milk, eggs, breadcrumbs, ketchup, Italian seasoning, salt, pepper, and parsley; mix until fully combined.
  4. Transfer mixture into a loaf pan and smooth the top.
  5. Bake in preheated oven for about 40 minutes.
  6. For the glaze, mix ketchup, brown sugar, and apple cider vinegar in a small bowl; spread over the meatloaf and return to the oven for an additional 20-30 minutes.
  7. Allow to rest for 10 minutes before slicing.
