6 cups chopped romaine lettuce
1 cup chopped grape tomatoes
1 large cucumber, diced
1/4 cup diced red onion
1 cup cooked quinoa
2 cooked chicken breasts, diced
1/2 cup pepperoncini
1/3 cup feta cheese
1/3 cup olive oil
3 tablespoons apple vinegar
1 1/2 teaspoons dijon mustard
Juice from 1 lemon
2 teaspoons minced garlic
3/4 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
In a large mixing bowl, combine the chopped romaine lettuce, diced cucumber, chopped tomatoes, and red onion.
