  • 2 garlic cloves (minced)
  • ½ red bell pepper (diced)
  • 1 small jalapeno (seeded and finely diced)
  • 1 cup long grain white rice
  • ½ teaspoon cumin
  • Kosher salt (to taste)
  • 8 ounces tomato sauce
  • 1 cup vegetable or chicken broth
  • Optional: finely chopped cilantro for garnish

Instructions

  1. Rinse and drain the rice using a fine mesh sieve to remove excess starch.
  2. In a large saucepan over medium-high heat, heat olive oil and sauté diced onion, minced garlic, red bell pepper, and jalapeño for 1-2 minutes until onions are translucent.
  3. Add the washed rice and sauté until lightly toasted (about 2 minutes).
  4. Stir in cumin, salt, tomato sauce, and broth until well combined.
  5. Bring to a boil, cover with a lid, reduce heat to low, and simmer for 15 minutes until liquid is absorbed.
