  • 3 cups shredded boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar cheese (divided)
  • 2 cups frozen mixed vegetables (no need to thaw)
  • 1 cup crushed Ritz crackers
  • 4 tbsp melted butter

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish.
  2. Boil chicken breasts for 15-20 minutes until cooked, then shred into bite-sized pieces.
  3. In a large mixing bowl, combine shredded chicken, cream of chicken soup, sour cream, 1 cup of cheddar cheese, and frozen mixed vegetables. Mix well.
  4. Spread the mixture evenly in the prepared casserole dish and top with remaining cheddar cheese.
  5. Combine crushed Ritz crackers with melted butter and sprinkle over the casserole.
  6. Bake for 30-35 minutes until bubbly and golden brown on top.
