- 3 cups shredded boneless, skinless chicken breasts
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 2 cups shredded sharp cheddar cheese (divided)
- 2 cups frozen mixed vegetables (no need to thaw)
- 1 cup crushed Ritz crackers
- 4 tbsp melted butter
- Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish.
- Boil chicken breasts for 15-20 minutes until cooked, then shred into bite-sized pieces.
- In a large mixing bowl, combine shredded chicken, cream of chicken soup, sour cream, 1 cup of cheddar cheese, and frozen mixed vegetables. Mix well.
- Spread the mixture evenly in the prepared casserole dish and top with remaining cheddar cheese.
