  • 15 oz canned great Northern beans, drained
  • 15 oz canned kidney beans, drained
  • 32 oz vegetable broth
  • 1 tbsp Italian seasoning
  • 1 tbsp dry basil
  • 1/2 cup small pasta (e.g., ditalini)
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add zucchini, carrots, celery, and onion; sauté for about 10 minutes until softened.
  2. Stir in canned tomatoes with juices and season with Italian seasoning and dry basil.
  3. Pour in vegetable broth along with pasta and both types of beans. Simmer for about 10 minutes. If desired, add up to 2 cups of water for a thinner consistency.
  4. Add minced garlic and let simmer for another 10 minutes to meld flavors.
