3/4 pound lean ground beef
1 medium onion, diced
1 egg
1 cup panko bread crumbs
1 cup milk
Salt & pepper
8 slices turkey bacon
Instructions
Preheat oven to 350°F (175°C). In a large mixing bowl, combine ground beef, diced onion, egg, panko bread crumbs, salt & pepper, and milk. Mix thoroughly by hand.
Divide the mixture into eight equal portions and shape each into a mini meatloaf on a baking sheet.
Cut turkey bacon slices in half. Wrap each piece around the mini meatloafs in a criss-cross pattern and tuck the ends underneath.
Bake for about 50 minutes until cooked through. For crispy Turkey bacon, switch to broil for an additional 3-5 minutes.
