  • 4 lbs lamb shoulder, bone-in
  • 1 cup dried apricots, chopped
  • 1/2 cup toasted slivered almonds
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 cinnamon stick
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/2 tsp smoked paprika
  • Broth (enough to cover half the lamb)

Instructions

  1. Gather all ingredients; chop dried apricots and slice onion thinly.
  2. In a Dutch oven, heat oil over medium-high heat and sear the lamb shoulder until browned on all sides.
  3. Remove the lamb and sauté onions and garlic in the same pot until softened.
  4. Return the lamb to the pot; add apricots, almonds, cinnamon stick, spices, and enough broth to cover half of the lamb.
  5. Bring to a simmer, cover with a lid, reduce heat to low, and braise for about 3 hours until tender.
  6. After cooking, let rest for a few minutes before serving.
