  • 1 and 1/2 cups packed brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon kosher salt
  • 1 cup old-fashioned rolled oats
  • 1 and 1/4 cups blended old-fashioned rolled oats
  • 2 and 1/2 cups semisweet chocolate chips

Instructions

  1. Preheat your oven to 325°F (163°C) and line two baking sheets with parchment paper.
  2. In a large bowl or stand mixer, beat the softened butter until creamy. Gradually add brown sugar and mix until fluffy.
  3. Incorporate the egg, egg yolk, and vanilla extract, mixing well.
  4. In a separate bowl, combine all-purpose flour, baking soda, baking powder, and salt. Add this mixture to the wet ingredients without fully incorporating.
  5. Mix in the whole rolled oats and then blend additional rolled oats into a coarse flour; fold this into the dough along with chocolate chips.
  6. Form dough balls slightly larger than golf balls and place them on prepared sheets with space in between.
  7. Bake for 9–10 minutes until edges are firm but centers look shiny. Reshape cookies immediately after removing from the oven for thick centers.
  8. Allow cooling on pans before transferring to wire racks.
