  • 1/4 yellow onion (diced)
  • 3 cloves garlic (minced)
  • 68 oz chicken thighs (cut into bite-sized pieces)
  • 1/4 cup frozen mixed vegetables
  • 3 brown mushrooms (diced)
  • 2 cups cooked white rice (preferably day-old)
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 6 large eggs (divided)
  • 2 tablespoons milk (divided)
  • 1/2 teaspoon salt (divided)

Instructions

  1. In a non-stick skillet over medium heat, add a little oil. Sauté the diced onion until translucent, then add garlic and cook until fragrant.
  2. Stir in chicken pieces and cook until browned. Mix in frozen vegetables and mushrooms; cook until heated through.
  3. Add cooked rice, ketchup, soy sauce, and half of the salt; stir to combine evenly.
  4. In a mixing bowl, whisk together 4 eggs, 1 tablespoon milk, and remaining salt. In the same skillet used for rice, heat a little oil over medium-low heat and pour in the egg mixture.
  5. Cook until edges set but center is slightly runny. Slide fried rice onto one half of the omelet and fold over.
  6. Transfer to a plate; garnish with ketchup and parsley before serving.
