  • ½ lb lean ground beef
  • 1 tsp olive oil
  • ½ cup yellow onion, chopped
  • 3 garlic cloves, minced
  • 3 tbsp tomato paste
  • 24 oz jar red pasta sauce or marinara
  • 7 cups beef or chicken broth
  • 910 uncooked lasagna noodles, broken into pieces
  • 3 cups fresh baby spinach
  • ½ cup shredded parmesan cheese
  • 1 cup fresh ricotta

Instructions

  1. In a large Dutch oven over medium-high heat, brown the lean ground beef for about 8–10 minutes. Drain excess grease and set aside.
  2. Sauté chopped onions in the same pot until translucent (about five minutes). Add minced garlic and tomato paste; cook for an additional minute.
  3. Return the browned beef to the pot along with seasonings, red pasta sauce/marinara, and broth. Bring to a simmer before adding broken lasagna noodles. Cover and simmer for about twenty minutes until noodles are tender.
  4. Stir in fresh spinach until wilted. Mix in shredded parmesan cheese and serve topped with dollops of ricotta.
