  • 6 tablespoons butter
  • 1 cup yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 5 cloves garlic, minced
  • 4 tablespoons flour
  • 8 cups chicken broth
  • 8 oz. uncooked elbow macaroni
  • 1 cup heavy cream
  • 8 oz. sharp cheddar cheese, shredded
  • 1 teaspoon white balsamic vinegar
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste
  • 4 sesame seed buns, diced into 1-inch pieces
  • 2 tablespoons olive oil
  • Sliced green onion for garnish
  • Shredded cheddar cheese for garnish

Instructions

  1. Preheat the oven to 400°F. Prepare croutons by tossing diced sesame seed buns with olive oil, then bake until crispy.
  2. In a large pot over medium heat, brown ground beef with oregano and thyme, then set aside.
  3. Sauté onions, carrots, and celery in butter until softened; then add minced garlic.
  4. Stir in flour and cook briefly before deglazing the pot with chicken broth.
  5. Add remaining broth and uncooked macaroni; bring to a simmer and cook until pasta is al dente.
