  • 1 cup pitted dates, chopped
  • 1 cup boiling water
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 2 large eggs
  • Zest and juice of 2 oranges
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cardamom
  • 1/4 cup honey

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8-inch cake tin.
  2. In one bowl, whisk together flour, baking powder, cardamom, and salt.
  3. In another bowl, cream butter and brown sugar until fluffy. Add eggs, vanilla extract, orange zest, and juice; mix well.
  4. Fold in chopped dates mixed with boiling water and baking soda.
  5. Gradually add dry ingredients to wet ingredients until just combined.
  6. Pour batter into prepared tin and bake for 40–45 minutes or until a toothpick comes out clean.
  7. For the honey drizzle, warm honey with orange juice until combined; drizzle over warm cake after baking.
