  • 1/2 cup light brown sugar (packed)
  • 1/8 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 1 tsp vanilla extract
  • 3/4 cup + 2 tbsp all-purpose flour
  • 1/2 tsp fine sea salt
  • 1/2 tsp baking soda
  • 4 Oreos (chopped plus more for the top)
  • 4 tbsp unsalted butter
  • 1/3 cup semi-sweet chocolate chips
  • 1/4 cup + 1/8 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp fine sea salt

Instructions

  1. Preheat your oven to 350°F (180°C) and line an 8×8 baking pan with parchment paper.
  2. In a mixing bowl, cream together unsalted butter, light brown sugar, and granulated sugar until fluffy. Add the egg yolk and vanilla, then mix well. Fold in flour, salt, baking soda, and chopped Oreos.
  3. In another bowl, melt butter and chocolate chips together until smooth. Mix in granulated sugar, egg, and vanilla until fluffy. Fold in cocoa powder, flour, and salt.
  4. In the prepared pan, scoop cookie dough in dollops, filling spaces with brownie batter. Press down cookie dough slightly and sprinkle more chopped Oreos on top.
  5. Bake for 25–27 minutes or until golden brown; check doneness with a toothpick.
