  • 1 pound extra lean ground beef
  • 1 large onion (about 1½ cups)
  • 2 medium carrots (peeled and diced)
  • 3 stalks celery (diced)
  • 1 tablespoon minced garlic
  • 4 cups chicken broth
  • 1 (28-ounce) can tomato sauce
  • 1 (15-ounce can) diced tomatoes
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon dried marjoram
  • 1 cup dry ditalini pasta
  • 1 (15-ounce can) dark red kidney beans (drained and rinsed)
  • 1 (15-ounce can) great northern beans (drained and rinsed)
  • Salt and pepper to taste

Instructions

  1. In a crock pot with a browning function or a skillet, cook the ground beef until fully browned. Add diced onions, carrots, and celery; sauté until tender.
  2. Toss dry ditalini pasta with olive oil and microwave on low power until blistered.
  3. Combine browned meat mixture, toasted pasta, chicken broth, tomato sauce, diced tomatoes, seasonings, and beans in the crock pot.
  4. Cover and cook on low for 2 to 3 hours or until pasta is tender. Adjust seasoning before serving.
