  • 1 lb ground beef
  • 1 small yellow onion (diced)
  • 2 medium carrots (diced)
  • 3 ribs celery (diced)
  • 2 cloves garlic (minced)
  • 29 oz diced tomatoes (with liquid, 214.5 oz cans)
  • 15 oz dark red kidney beans (drained and rinsed)
  • 15 oz cannellini beans (drained and rinsed)
  • 15 oz tomato sauce
  • 1 cup beef broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp sugar
  • 8 oz Ditalini pasta

Instructions

  1. In a large Dutch oven, brown 1 lb of ground beef over medium heat for about 7 minutes. Drain excess grease.
  2. Add 1 diced onion, 2 diced carrots, and 3 diced celery ribs; stir occasionally for 10 minutes until softened. Sauté in 2 minced garlic cloves for an additional 1-2 minutes.
  3. Stir in 29 oz diced tomatoes, 15 oz dark red kidney beans (drained), 15 oz cannellini beans (drained), 15 oz tomato sauce, 1 cup beef broth, and seasonings (1 tsp each: basil, oregano, salt, pepper; plus 1 tsp sugar). Simmer for 20 minutes.
  4. Cook 8 oz Ditalini pasta separately until al dente. Drain and add to the soup just before serving.
