  • 1 pound chicken sausage
  • 21/4 cups mirepoix (carrots, celery, onion)
  • 1 tablespoon minced garlic
  • 2 (15-ounce) cans diced tomatoes
  • 2 (32-ounce) cartons reduced-sodium beef broth
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 2 cups uncooked mini farfalle pasta
  • 4 cups fresh baby spinach

Instructions

  1. In a large pot over medium-high heat, warm 1 tablespoon olive oil. Add sausage and cook until browned; transfer to a plate.
  2. Drain excess grease from the pot and sauté mirepoix for 5–7 minutes until tender. Add garlic and cook for an additional 30 seconds.
  3. Pour in diced tomatoes and beef broth; season with basil, Italian seasoning, salt, and pepper.
  4. Bring to a boil; add mini farfalle pasta and cook uncovered for 7–9 minutes until al dente. Stir in cooked sausage and spinach until wilted.
