  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter (softened)
  • 3/4 cup firmly packed light brown sugar
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 1/2 cups mashed banana (about 3 or 4 medium overripe bananas)
  • 1/2 to 2/3 cups chopped nuts (such as pecans, walnuts, hazelnuts, or peanuts, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
  2. Whisk together all-purpose flour, ground cinnamon, baking powder, baking soda, and salt in a mixing bowl.
  3. In another bowl, beat together softened butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time, mixing well after each addition. Mix in vanilla extract.
  4. Reduce the mixer speed to low and gradually add the dry flour mixture in three portions, alternating with two portions of sour cream until well combined.
  5. Gently stir in mashed bananas followed by chopped nuts if desired.
  6. Spread the batter evenly in the prepared loaf pan and bake for about 50 to 55 minutes or until golden brown. A toothpick inserted into the center should come out clean.
  7. Let it cool in the pan on a wire rack for about 10 minutes before transferring it to a wire rack to cool completely.
