  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1½ cups jasmine rice
  • 2¼ cups chicken broth
  • ¼ cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon butter
  • 45 jalapeño peppers, stems removed
  • 1 cup fresh cilantro leaves and tender stems
  • ½ cup mayonnaise
  • 2 garlic cloves
  • 1 tablespoon olive oil
  • Salt to taste

Instructions

  1. Pat chicken thighs dry and season with cumin, smoked paprika, garlic powder, salt, and pepper. Let rest.
  2. In a food processor, blend jalapeños, cilantro, mayonnaise, garlic, lime juice, and olive oil until smooth to make the green sauce.
  3. Sear the seasoned chicken in an oven-safe skillet over medium-high heat until golden brown on both sides.
  4. Transfer skillet to a preheated oven at 400°F and roast for 20-25 minutes until cooked through.
  5. For the rice, rinse jasmine rice and cook in boiling chicken broth for 18 minutes. Stir in cilantro, lime juice, butter, and salt.
  6. Serve chicken over rice with green sauce drizzled on top.
