  • 1 garlic bulb
  • 2 1/2 tbsp olive oil
  • 1 lb broccoli crowns
  • 1 tsp garlic powder
  • 1 tbsp fresh thyme
  • 2 shallots, diced
  • 1/2 tsp fennel seeds
  • 4 cups vegetable broth
  • 2 cups warm water
  • 3/4 cup dry orzo
  • Zest and juice of 1 lemon
  • 12 tbsp pesto (dairy-free)
  • Fresh dill (for garnish)
  • Kosher salt to taste
  • Pepper to taste

Instructions

  1. Preheat oven to 425°F. Cut the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for about 35-40 minutes.
  2. Toss broccoli pieces with olive oil, garlic powder, thyme, and salt on a baking tray. Roast for about 20 minutes until tender.
  3. In a large pot over medium heat, sauté shallots in remaining olive oil for 2-3 minutes. Add roasted garlic cloves and fennel seeds.
  4. Stir in two-thirds of the roasted broccoli and add vegetable broth. Bring to a low boil and add orzo. Cook for about 9-10 minutes until al dente.
  5. Remove from heat; stir in lemon zest and pesto. Adjust seasoning as desired. Serve topped with remaining broccoli and fresh dill.
