  • 1/4 cup granulated sugar
  • 1/4 cup milk (or heavy cream)
  • 8 oz mascarpone cheese, softened
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 1/2 cups brewed espresso or strong coffee, cooled
  • 1 package (about 7 oz) ladyfinger cookies (savoiardi)
  • 1/2 cup chopped pistachios (for garnish)

Instructions

  1. Prepare the pistachio cream by blending the shelled pistachios, sugar, milk (or heavy cream), and vanilla extract in a food processor until smooth.
  2. In a large mixing bowl, beat together the mascarpone cheese, heavy cream, and powdered sugar until fluffy. Fold in the pistachio cream.
  3. Combine cooled espresso with optional flavoring in a shallow dish. Dip ladyfingers quickly into the coffee mixture and layer them in an 8×8-inch dish or trifle bowl.
  4. Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of dipped ladyfingers followed by the remaining mascarpone.
  5. Chill for at least 4 hours before serving. Garnish with chopped pistachios and optional toppings.
