  • 1 avocado, sliced
  • 1 slice whole grain or rye bread
  • 1 cup roasted red and green bell peppers (jarred or homemade)
  • 1 cup cherry tomatoes, halved or whole
  • 1 tsp olive oil (for drizzling)
  • Salt & black pepper, to taste
  • Optional garnish: sesame seeds or everything bagel seasoning

Instructions

  1. To poach the egg, bring a small pot of water to a simmer and add a splash of vinegar.
  2. Crack the egg into a small bowl before gently sliding it into the water. Cook for about 3 minutes for a runny yolk, then carefully remove with a slotted spoon.
  3. Toast your slice of bread until golden brown.
