  • 3 pounds boneless skinless chicken thighs (or breasts)
  • 1 can chipotle peppers in adobo sauce
  • 4 tbsp fresh lime juice
  • 4 tbsp fresh orange juice
  • ½ cup fresh cilantro
  • 6 garlic cloves
  • 1 medium onion
  • 1 tsp cumin
  • 1 tbsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. In a blender or food processor, combine chipotle peppers, lime juice, orange juice, cilantro, garlic cloves, onion, cumin, oregano, smoked paprika, salt, and pepper. Blend until smooth.
  2. Place chicken in a mixing bowl and pour marinade over it. Toss to coat well. Cover and marinate for at least 30 minutes.
  3. Preheat grill or grill pan over medium-high heat.
  4. Grill marinated chicken for about 6-7 minutes on each side until cooked through (internal temperature of 165°F). Let rest before slicing.
