  • 1 head garlic
  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)
  • kosher salt
  • 6 tablespoons butter
  • 3/4 cup half and half
  • fresh ground pepper

Instructions

  1. Preheat the oven to 375°F. Cut the top off the garlic head and wrap it in aluminum foil with olive oil. Roast for about one hour until soft.
  2. In a large pot, place quartered red potatoes and cover them with cold water and salt. Boil until fork-tender (about 15 minutes).
  3. Drain the potatoes and return them to the pot. Squeeze in the roasted garlic cloves.
  4. Warm the half and half and butter until melted, then pour over the potatoes along with salt and pepper to taste. Mash until creamy with some lumps remaining.
  5. Serve warm, garnished with fresh herbs if desired.
