  • 3 large sweet onions, sliced
  • 4 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 2 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • 2 cups low-sodium beef broth
  • 1 ½ cups Gruyère cheese, shredded

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, melt the butter and sauté the sliced onions until golden brown. Add garlic and thyme; cook until fragrant.
  3. Layer half of the sliced potatoes in the baking dish, followed by half of the onion mixture. Repeat with remaining potatoes and onions.
  4. Pour beef broth evenly over all layers and top with shredded cheese.
  5. Cover with foil and bake for 45 minutes. Remove foil and bake an additional 15 minutes until golden brown.
  6. Allow resting for about 10 minutes before serving.
