  • 2 pounds ground beef (or ground turkey)
  • 1 sleeve finely crushed saltine crackers
  • 2 eggs
  • 1 medium yellow onion, minced
  • 1 medium green bell pepper, minced
  • 3 tablespoons ketchup
  • 1/2 cup canned crushed tomatoes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, crushed crackers, eggs, minced onion, minced bell pepper, garlic powder, ketchup, brown sugar, onion powder, black pepper, and Worcestershire sauce. Mix until combined without overmixing.
  3. Roll the mixture into golf ball-sized meatballs and arrange them on a parchment-lined baking sheet.
  4. Bake for 30 minutes. Remove from the oven and spoon crushed tomatoes over each meatball; return to bake for an additional 20 minutes until cooked through (internal temperature should reach 160°F).
  5. Let cool slightly before serving.
