  • 1 chopped yellow onion
  • 2 large carrots (sliced)
  • 3 celery stalks (thinly sliced)
  • 5 cloves garlic (minced)
  • 32 oz low-sodium beef broth
  • 1 cup water
  • 2 Tbsp tomato paste
  • 32 oz marinara sauce
  • 1 cup dry ditalini pasta
  • 1 can red beans (16 oz)
  • 1 can cannellini beans (16 oz)
  • Fresh herbs: basil, rosemary, oregano, thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium-high heat, crumble and cook the sausage until browned.
  2. Add onions, carrots, celery; sauté until tender. Stir in garlic for one additional minute.
  3. Pour in broth, water, tomato paste, marinara sauce, sugar, and herbs. Stir well and bring to boil.
  4. Reduce heat; cover and simmer for about 10 minutes.
  5. Add ditalini pasta and beans; cook on low until pasta is al dente (about 5 minutes).
  6. Season with salt and pepper to taste before serving.
