  • 1 large ripe mango
  • 1/4 cup diced red onion
  • 1 small jalapeño (optional)
  • Juice of 1 lime
  • 12 tbsp chopped fresh cilantro
  • 1/4 cup plain Greek yogurt
  • 1 tbsp mayonnaise (optional)
  • Zest and juice of 1 lime
  • 1 tsp honey or agave
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa

Instructions

  1. Prepare Mango Salsa: Mix diced mango, red onion, jalapeño (if using), lime juice, cilantro, and salt in a bowl. Chill.
  2. Make Lime-Chili Sauce: Whisk Greek yogurt, lime zest, lime juice, honey, chili powder, salt, and pepper together.
  3. Cook Shrimp: Season shrimp with chili powder, salt, and pepper. Grill on medium-high heat for 2–3 minutes per side until pink and slightly charred.
