  • 2 lbs ground beef
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • ¾ cup Italian style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • 1215 large fresh basil leaves
  • 1 ¼ cup shredded mozzarella cheese
  • 1 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion and red bell pepper until soft. Add minced garlic and cook until fragrant.
  3. In a large mixing bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, tomato paste, salt, black pepper, parsley, and cooled vegetables. Mix until just combined.
  4. On parchment paper, form the meat mixture into an 8"x15" rectangle. Layer with deli chicken (or an alternative), basil leaves, and mozzarella cheese.
  5. Roll up the meatloaf using the parchment paper as a guide and seal the edges tightly.
  6. Place on a baking sheet lined with parchment paper and bake for 1 hour. Let rest before slicing.
