  • 2 cups shredded sharp cheddar cheese
  • 1 large yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried paprika
  • 1 teaspoon dried parsley flakes (optional)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt (to taste; start with 1/2 teaspoon, adjust after cooking)

Instructions

  1. Brown the ground beef in a skillet over medium heat; drain excess grease.
  2. Add chopped onion and minced garlic to the beef; cook until softened.
  3. In a slow cooker, combine the beef mixture with frozen potatoes, corn, diced tomatoes, cream of mushroom soup, and broth. Mix well.
  4. Season with spices (except salt) and stir until combined.
  5. Cover and cook on low for about 3 hours or until potatoes are tender, stirring occasionally.
  6. Stir in one cup of cheese about 15 minutes before serving; top with remaining cheese before serving.
