  • 23 boneless chicken breasts
  • 2 cups corn (frozen, canned, or fresh)
  • 4 oz cream cheese, cubed
  • 1/3 cup cotija cheese
  • Juice of 1 lime
  • 2 garlic cloves, minced
  • 1/2 tsp chili powder

Instructions

  1. Place boneless chicken breasts in the bottom of your slow cooker.
  2. Layer with corn, cream cheese cubes, cotija cheese, lime juice, minced garlic, and chili powder. Do not stir.
  3. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours until the chicken shreds easily.
  4. Shred the chicken directly in the pot using two forks and mix gently to combine.
