  • 1 cup vegan butter, softened
  • 3 teaspoons vanilla paste (or extract)
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1/3 cup brown sugar
  • 3 1/4 cups powdered sugar

Instructions

  1. Cream together softened vegan butter, pumpkin puree, brown sugar, granulated sugar, and vanilla until light and fluffy.
  2. In another bowl, whisk together all-purpose flour, baking powder, pumpkin pie spice, cornstarch, and salt.
  3. Gradually combine the dry ingredients with the wet mixture on low speed until just blended. Chill the dough for at least 30 minutes.
  4. Preheat oven to 350°F (177°C). Scoop dough into 2-inch balls and flatten slightly on a parchment-lined baking sheet.
  5. Bake for 10–12 minutes until set but soft. Cool completely before frosting.
  6. For frosting, blend softened vegan butter, vanilla paste, cinnamon, brown sugar, and powdered sugar until smooth. Pipe onto cooled cookies.
