  • 4 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together flour, sugar, baking soda, and salt.
  3. Add softened butter, eggs, and vanilla extract. Beat on medium speed for about 2 minutes until well combined.
  4. Gently fold in the drained pineapple and chopped pecans until evenly distributed.
  5. Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely.
  7. Prepare the frosting by beating together softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla while mixing until combined. Adjust consistency with milk if needed.
  8. Once completely cooled, frost the top of one cake layer, place the second layer on top, and frost the sides and top.
