  • 1 tbsp gochugaru (or ½ tsp chili flakes)
  • 1/2 tbsp soy sauce
  • 1 tsp rice apple vinegar
  • 1/2 tbsp sugar
  • 1/2 tsp toasted sesame oil
  • 1/2 cup water
  • 2 tbsp neutral oil (divided)
  • 2 packs enoki mushrooms
  • 1 clove garlic (minced)

Instructions

  1. In a small bowl, mix gochujang, gochugaru, soy sauce, rice vinegar, sugar, sesame oil, and water until well combined.
  2. Trim and rinse enoki mushrooms; break them into smaller bundles.
  3. Heat 1 tbsp neutral oil in a large skillet over medium-high heat. Cook half the mushrooms for 1-2 minutes on each side until golden brown; set aside.
  4. Sauté minced garlic in the remaining oil for about 30 seconds before adding the sauce mixture. Simmer briefly.
  5. Combine cooked mushrooms with the sauce and cook uncovered for 3-4 minutes until evenly coated.
