  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups low-sodium vegetable broth
  • 1 can full-fat coconut milk
  • 3 tablespoons miso paste (red or white)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon Sriracha (to taste)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté diced onion in olive oil until translucent (about 5 minutes). Add minced garlic and grated ginger; cook for another minute until fragrant.
  2. Add chopped carrots and vegetable broth; bring to a boil. Reduce heat and simmer until carrots are tender (about 15 minutes).
  3. Transfer soup mixture to a blender in batches and blend until smooth. Return to pot.
  4. Stir in miso paste, soy sauce, Sriracha, and coconut milk; heat gently while stirring until combined—do not boil after adding miso.
  5. Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with chopped green onions and cilantro.
