  • 8 tbsp butter
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 cup mashed bananas (about 2 bananas)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • ¾ cup buttermilk
  • 8 tbsp butter (for toffee sauce)
  • ¾ cup brown sugar (packed, for toffee sauce)
  • ¾ cup heavy cream (for toffee sauce)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a deep baking dish with nonstick spray.
  2. In a mixing bowl, cream together granulated sugar, brown sugar, and butter until fluffy. Add eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas; mix well.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually combine wet and dry ingredients until just mixed; do not overmix.
  5. Pour batter into the prepared baking dish and bake for 45-55 minutes or until a toothpick comes out clean.
  6. For the toffee sauce, melt butter and brown sugar in a pot over medium-low heat. Stir in heavy cream and cook for an additional 5 minutes.
  7. Once the cake cools slightly, poke holes in the top and pour over cooled toffee sauce. Let it soak for at least one hour before serving.
