  • 4 oz. dried mung bean vermicelli noodles
  • 1 tbsp peanut or vegetable oil
  • 1 tbsp minced ginger
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 1 tbsp doubanjiang
  • 4 oz. ground beef
  • 1/2 cup chicken broth or water
  • 1 tbsp light soy sauce
  • 1 tsp dark soy sauce
  • 1 tbsp apple vinegar or dry apple juice
  • 1 tsp sugar

Instructions

  1. Soak the vermicelli noodles in hot water for about 15 minutes until softened. Drain and toss with a little oil to prevent sticking.
  2. In a small bowl, mix the sauce ingredients: ground beef, chicken broth, soy sauces, vinegar, and sugar.
  3. Heat oil in a nonstick pan over medium heat. Add ginger, garlic, and green onions; sauté until fragrant (about 30 seconds).
  4. Add the ground beef and cook until fully browned (approximately 2 minutes). Stir in doubanjiang and cook for an additional minute.
  5. Combine the soaked vermicelli and sauce mixture in the pan; stir well. Cover and cook for another 2-3 minutes until heated through.
  6. Remove the lid and cook over medium-high heat until the liquid evaporates (around 1 minute). Serve hot.
