  • 2 cups granulated sugar
  • 4 large eggs (room temperature)
  • 1 tbsp vanilla extract
  • 3 cups all-purpose flour
  • 1 cup sour cream
  • 1 cup fresh strawberries (chopped)
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp pureed strawberries (for glaze)
  • 1 tsp vanilla extract (for glaze)

Instructions

  1. Preheat oven to 325°F (163°C) and grease a loaf or bundt pan.
  2. Cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Alternate adding dry ingredients and sour cream to the butter mixture.
  4. Toss chopped strawberries in flour and fold gently into the batter.
  5. Pour batter into the prepared pan and bake for 60-70 minutes until a toothpick comes out clean. Cool in pan for 10 minutes before transferring to a wire rack.
  6. To make the glaze, blend strawberries into puree and mix with powdered sugar and vanilla until desired consistency is reached.
  7. Once cooled, drizzle the glaze over the cake.
