  • 2 large sweet potatoes (about 1.5 lbs or 680 g), peeled and thinly sliced
  • 4 cups kale, stems removed and chopped
  • 1 cup heavy cream (240 ml)
  • 3 cloves garlic, minced
  • 1 cup Gruyère cheese, grated (about 100 g)
  • 1/4 teaspoon ground nutmeg
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil (for greasing the baking dish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice the sweet potatoes using a sharp knife.
  3. Wash and chop the kale. Sauté in a skillet over medium heat with a splash of water or olive oil for about 5-7 minutes until wilted.
  4. Grease your baking dish with olive oil.
  5. Layer the ingredients: sweet potato slices, sautéed kale, heavy cream, and Gruyère cheese. Repeat until all ingredients are used.
  6. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 20-25 minutes until golden brown and tender.
  7. Let cool for about 10 minutes before serving.
