  2. In a larger bowl, whisk together Greek yogurt, pumpkin puree, eggs, vanilla extract, and milk until smooth.
  3. Pour the wet ingredients into the dry and gently mix until just combined; some small lumps are okay.
  4. Let the batter rest for a couple of minutes while heating a non-stick skillet over medium-high heat.
  5. Pour about 2 tablespoons of batter for each pancake onto the skillet; cook until bubbles form (about 2-3 minutes), flip and cook for another minute until golden brown.
