  • 12 teaspoons fresh thyme leaves, chopped
  • 1/2 teaspoon dried Italian herb blend
  • 1 pound gnocchi
  • 2 cups cooked rotisserie chicken breast, shredded
  • 2 cups fresh spinach, roughly chopped
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large pot over medium heat, melt the butter with olive oil. Add the diced onions, grated carrots, and celery. Cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Sprinkle flour over the sautéed vegetables. Stir well to coat everything evenly. Gradually add the apple cider vinegar while stirring continuously to prevent lumps.
  3. Slowly pour in the chicken broth while stirring. Once combined, bring it to a gentle simmer. Add warmed half-and-half along with thyme leaves and Italian herb blend.
  4. Add the gnocchi to the simmering soup. Cook according to package instructions until tender. Stir in shredded rotisserie chicken and chopped spinach until heated through.
