  • 1/4 cup (50g) packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (180g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) heavy cream
  • 1/4 cup (57g) unsalted butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 cups (210g) sweetened shredded coconut, toasted
  • 4 ounces (113g) semi-sweet chocolate, chopped
  • 1 teaspoon coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In one bowl, cream softened butter with granulated and brown sugars until fluffy. Beat in egg and vanilla.
  3. In another bowl, mix flour, baking soda, and salt; combine with the wet mixture until just combined.
  4. Drop rounded tablespoons of dough onto prepared sheets and bake for 8-10 minutes until edges are golden.
  5. Meanwhile, prepare the caramel coconut topping by cooking granulated sugar, heavy cream, butter, and salt in a saucepan until it reaches 245°F (118°C). Stir in toasted coconut.
  6. Spoon the caramel mixture onto each cooled cookie and let set for 30 minutes.
  7. Melt chocolate with coconut oil in a heatproof bowl and drizzle over cookies once set.
