  • 2 tablespoons instant espresso powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 115 g unsalted butter (softened to room temperature)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 200 g mascarpone cheese or cream cheese
  • 100 g whipping cream
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons cocoa powder (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix flour, espresso powder, baking powder, baking soda, and salt in one bowl. In another bowl, cream together softened butter with sugars until light and fluffy. Mix in egg and vanilla.
  3. Gradually combine dry ingredients with wet ingredients until just mixed.
  4. Scoop onto a parchment-lined baking sheet, spacing them 2 inches apart. Bake for 12 minutes or until edges are lightly golden.
  5. For the topping, beat mascarpone until creamy; add whipping cream and powdered sugar until soft peaks form. Mix in vanilla.
  6. Once cooled, spread mascarpone cream on each cookie and dust with cocoa powder.
