  • 1 tablespoon cooled espresso or strong coffee
  • 1/2 teaspoon cocoa powder (plus extra for dusting)
  • 1/2 cup graham cracker crumbs
  • 8 oz semi-sweet or dark chocolate (for coating)
  • Optional: 2 oz white chocolate (for drizzle) and mini chocolate chips (for garnish)

Instructions

  1. In a mixing bowl, blend mascarpone cheese, powdered sugar, vanilla extract, espresso, and cocoa powder until smooth.
  2. Fold in graham cracker crumbs until well combined. Refrigerate the mixture for 1 hour.
  3. Scoop out chilled mixture and roll into 1-inch balls; place on a parchment-lined tray.
  4. Freeze truffles for 15–20 minutes to firm up before coating.
  5. Melt semi-sweet or dark chocolate using a double boiler or microwave until smooth.
  6. Dip each truffle into the melted chocolate and gently tap off excess before returning to the tray.
  7. Optionally drizzle with melted white chocolate and top with mini chocolate chips.
  8. Dust with cocoa powder before chilling until set.
