  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon salt (adjust as needed)
  • 2 tablespoons cornstarch
  • 1/2 cup chopped green onion

Instructions

  1. In a small bowl, mix cornstarch with water to create a slurry.
  2. Heat oil in a large soup pot over medium heat. Sauté minced garlic and ginger until fragrant.
  3. Add chopped tomatoes and cook until soft.
  4. Stir in half the green onions and sauté briefly.
  5. Pour in chicken stock and bring to a boil; reduce to simmer.
  6. Season with soy sauce, salt, white pepper, and sesame oil.
  7. Gradually add the cornstarch slurry while stirring until the soup thickens slightly.
  8. Beat the eggs in a bowl, then drizzle into the pot while stirring gently to form ribbons.
  9. Simmer for another minute before serving hot with remaining green onions on top.
