  • 1 Tbs olive oil
  • 2 cups sliced carrots
  • 2 cups sliced sweet potatoes
  • 2 cups diced apple
  • 2 lbs ground lean turkey
  • 3 Tbs tomato paste
  • 3 cups crushed tomatoes
  • 2 cups strained tomatoes
  • 12 cans kidney beans
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 tsp rubbed sage
  • 1/2 tsp cinnamon
  • a sprinkle nutmeg
  • 2 tsp chili powder

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced carrots, sweet potatoes, and diced apples. Sprinkle with onion powder, garlic powder, salt, pepper, rubbed sage, cinnamon, and nutmeg. Cook for about 5 minutes while stirring occasionally.
  3. Add ground turkey to the pot and cook until no longer pink (about 5-7 minutes).
  4. Stir in tomato paste and chili powder along with additional salt and sage.
  5. Pour in crushed tomatoes and mix well.
  6. Simmer on low-medium heat for 20-30 minutes; add kidney beans towards the end to heat through.
