  • 1 tablespoon butter
  • Salt and pepper, to taste
  • 1 pound boneless skinless chicken breasts
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup Parmesan cheese, grated
  • 12 cups baby spinach
  • Freshly chopped parsley, for garnish

Instructions

  1. Slice the chicken breasts in half lengthwise to create four thin cutlets.
  2. Season both sides of the chicken with salt and pepper.
  3. In a large skillet, heat olive oil and butter over medium heat and cook the chicken until golden brown on both sides and cooked through (165°F). Remove from skillet and set aside.
  4. In the same skillet, sauté chopped onion until translucent, then add minced garlic and cook for an additional minute. Stir in sun-dried tomatoes and Italian seasoning.
  5. Gradually whisk in chicken broth followed by heavy cream. Add grated Parmesan cheese, stirring until the sauce thickens slightly. Season to taste.
  6. Stir in baby spinach until wilted, then return the cooked chicken to the skillet, covering with sauce.
  7. Serve hot, garnished with freshly chopped parsley.
